Sailfin Catfish

This chapter discusses the process of producing Hydrolysate protein from the sailfin catfish, scientifically known as Pterygoplichthys pardalis. This freshwater fish belongs to the Loricariidae family and is considered an invasive species in Indonesia. However, its potential for protein hydrolysate has not been explored yet, which is why it was used as the raw material.

The experiment involved collecting specimens of Pterygoplichthys pardalis from a river in Blitar Regency, East Java, Indonesia. The fish were cleaned to remove any impurities and then transported in a temperature-controlled container to the laboratory where the hydrolysis process was conducted.

The hydrolysis process involved different levels of pH (control, 5, 7, 9) and two different durations (12 and 24 hours), each replicated three times. The parameters of yield, antioxidant activity, degree of hydrolysis, protein levels, and ash content were measured and analyzed. The results showed that the time of hydrolysis, pH, and their interactions significantly impacted (p < 0.05) these parameters.

Moisture content, pH, and the duration of hydrolysis were found to have the most significant effect (p < 0.05), although their interactions did not. The fat content was significantly affected (p < 0.05) by the pH treatment. The optimal conditions for producing fish protein hydrolysate (FPH) from sailfin catfish were found to be a pH of 9 and a duration of 24 hours.
